Curried Carrots Recipe
Pickled Curry Carrots Salad
Ingredients:
Here is our variation on an old South African favourite
1kg Carrots pealed and sliced thinly
450 grams onions roughly chopped (you want a few longish strings)
500 ml white vinegar
400 grams sugar
100 grams seedless raisins (optional)
2 teaspoons salt (10ml)
Half a teaspoon whole cloves
1 teaspoon black peppercorns
25 ml corn starch and 25 ml curry powder mixed in 150 ml water
25 ml curry powder
Method
Just cover carrots with water and boil until almost soft
Add onions and boil bring to boil again
Let the mixture stand for 10 mins and drain the water
Add all other ingredients mix well and bring to the boil for 7 to 10 mins
Place mixture in sterilised hot jars and seal immediately.
